Under the condition of PH2.5-3.5,Acid amylase endo-Glucosinase, with the ability to hydrolyze raw starch, rapidly hydrolyze α-1,4 glucosidic bond, but can not hydrolyze α-1,6 glucoside bond, resulting in a large amount of glucose, maltose, maltotriose and α-dextrin.

Acid amylase: 1 g solid enzyme powder liquefies 1 mg soluble starch at 40°C, pH 3.0 for 1 min, which is a unit of enzyme activity, expressed as U/g.
